Located on the 40th floor of the Hotel, Il Ristorante - Niko Romito seats up to 62 indoors and 34 outdoors. Though the space incorporates Japanese design elements like the curved wood ceiling, the menu is classic Niko Romito with its contemporary expression of authentic Italian cuisine. Dishes such as Antipasto all’Italiana and Cotoletta alla Milanese capture the elegance and artistry of Chef’s Made in Italy approach, and establish new codes for a modern canon of Italian culture.

The visionary behind the signature Italian concept of Il Ristorante - Niko Romito in Dubai, Beijing, Shanghai, Milan, Paris, Tokyo and Rome Chef Niko Romito brings extraordinary talent and artistry to the world of Bvlgari Hotels & Resorts. A native of central Italy’s Abruzzo region, he has remained true to his roots while reimagining the flavours of Italy with a daring and simplicity that rewrites the rules of classic cuisine. Before his collaboration with Bvlgari Hotels & Resorts, his restaurant Reale garnered three Michelin stars for its striking contemporary Italian dishes.

Chef Niko is known for his precision and mastery of Italian gastronomy, and his bold concept—developed exclusively for Bvlgari Hotels & Resorts—establishes a new canon of Italian cooking, focusing on the essential ingredients and character that express the culture, elegance and vibrancy of the Made in Italy designation.

The Chef developed the menus and personally trained each of the chefs that helm Il Ristorante - Niko Romito restaurants around the world. He continues to act as a counselor and consultant, overseeing the integrity of the kitchen in every destination.

Bulgari Hotel Tokyo Mauro Aloisio Executive Chef

MAURO ALOISIO, RESIDENT HEAD CHEF

Originally from Milan, Chef Mauro Aloisio studied at the San Pellegrino Institute before taking his first job at the Badrutt’s Palace Hotel in Saint Moritz, Switzerland, where he spent five years. In 2009, he moved to Milan and spent eight years working in the kitchen at three of the city's most exclusive restaurants: Bvlgari Hotel Milano, Armani/Nobu and two Michelin-starred restaurant VUN at the Park Hyatt.
Chef Mauro also held a position at the Michelin-starred restaurant IL LAGO at the Four Seasons Hotel in Geneva, before moving to Shanghai to helm Il Ristorante - Niko Romito, which earned one Michelin star during his time there. Prior to Shanghai, Chef Mauro joined Niko Romito at his Accademia in Abruzzo to better understand the concept, vision and philsophy behind the Chef’s pioneering of modern Italian cuisine.
