Born in Kanagawa, Takuro Shimizu started his career locally before moving on to positions in Hokkaido, Kanagawa and Tokyo, where he worked under renowned chefs and at three-Michelin-starred restaurants. Before rising to the role of chef at Sushi Hōseki, he worked at Sushi Gyoten in Fukuoka.
