A sixth-generation sushi master, Chef Masahiro Sugiyama brings a 160-year-old family legacy to his role as Executive Chef at Hōseki. Born and trained in Tokyo, he is a master of Edomae sushi and apprenticed at Sushi Kanesaka. Chef Sugiyama is known for his exacting approach to sourcing fine ingredients and maintains close ties with the most renowned producers in Japan. He communicates with them daily to ensure world-class standards are met with every ingredient. Thanks to Dubai’s time zone, he can coordinate with Japan’s markets early each morning, making it easier to secure the most exceptional culinary treasures, which are then shipped to Dubai.
