Il Ristorante - Niko Romito

Following openings in Beijing, Dubai and Shanghai, the three-Michelin-starred Chef Niko Romito brought his acclaimed restaurant back to where it all began: Italy—specifically, to the Bvlgari Hotel Milano. Chef Niko has created his own concept around contemporary Italian cuisine, spending two years studying traditional techniques and ingredients in order to build a canon of modern Italian cooking in which flavour is foremost and the essence of “Made in Italy” comes through in every element.

This streamlining of classic methods in pursuit of an ingenious new paradigm is at the heart of the menu, so that guests are taken on an exceptional culinary journey that includes Niko's signature dishes such as 'Antipasto all'Italiana' and recodified versions of the traditional Lasagna, veal Milanese, Potato Ravioli with Red Prawns and Squids, and Tiramisù.

Chef Niko has enriched the menu with some new recipes that have been created exclusively for the Italian property such as Codfish, Potato Mayonnaise and Bell peppers, Black Pepper Beef, Tortelli with Ricotta cheese, Spinaches and ‘Manteca’ butter, Spaghetti and Tomato, Bread and Chocolate.

The dining room of Il Ristorante is equal parts refined and relaxed, with an effortless sense of glamour that transitions seamlessly from day to night. During spring and summer, outdoor dining is available.

The visionary behind the signature Italian concept of Il Ristorante - Niko Romito in Dubai, Beijing, Shanghai, Milan, Paris, Tokyo and Rome, Chef Niko Romito brings extraordinary talent and artistry to the world of Bvlgari Hotels & Resorts. A native of central Italy’s Abruzzo region, he has remained true to his roots while reimagining the flavours of Italy with a daring and simplicity that rewrites the rules of classic cuisine. Before his collaboration with Bvlgari Hotels & Resorts, his restaurant Reale garnered three Michelin stars for its striking contemporary Italian dishes.

Chef Niko is known for his precision and mastery of Italian gastronomy, and his bold concept—developed exclusively for Bvlgari Hotels & Resorts—establishes a new canon of Italian cooking, focusing on the essential ingredients and character that express the culture, elegance and vibrancy of the Made in Italy designation.

The Chef developed the menus and personally trained each of the chefs that helm Il Ristorante - Niko Romito restaurants around the world. He continues to act as a counselor and consultant, overseeing the integrity of the kitchen in every destination.

Giorgio Fuda, Executive Chef

Originally from Turin, Italy, Chef Giorgio Fuda studied at ALMA, the School of Italian Culinary Arts, before pursuing his culinary career. Prior to joining Bvlgari Hotels & Resorts, Chef Fuda spent 15 years honing his culinary skill at various renowned hotels and Michelin restaurants across France, Mexico and Italy including “VIP Restaurant”, one of the best Italian restaurants in Mexico and chef Cannavacciuolo’s restaurant “Cannavacciuolo bistrot” in Turin.

In 2021, he joined Chef Niko Romito project and successively worked in his 3 Michelin-starred Restaurant “Reale” in Abruzzo and Bvlgari Resort Dubai as a sous chef to better understand the concept, vision and philsophy behind the Chef’s pioneering canon of modern Italian cuisine.

Before moving to Bvlgari Hotel Milano, Chef Giorgio was Executive Chef in Bvlgari Hotel Shanghai. With his efforts, Il Ristorante – Niko Romito Shanghai has been awarded with one Michelin star in the MICHELIN Guide Shanghai 2023.
