Né à Kanagawa, Takuro Shimizu débute sa carrière au niveau local avant d’élargir son expérience à Hokkaido, Kanagawa et Tokyo.
Il affine ensuite ses compétences auprès de chefs renommés et dans des restaurants triplement étoilés, mettant aujourd’hui son expérience unique au profit de son rôle de chef au Sushi Hōseki.

Awarded one Michelin star for three consecutive years since its opening, Il Ristorante - Niko Romito is located on the 40th floor of the Hotel and seats up to 62 indoors and 34 outdoors. Though the space incorporates Japanese design elements like the curved wood ceiling, the menu is classic Niko Romito with its contemporary expression of authentic Italian cuisine. Dishes such as Antipasto all’Italiana and Cotoletta alla Milanese capture the elegance and artistry of Chef’s Made in Italy approach, and establish new codes for a modern canon of Italian culture.
Perched atop the Hotel on its 45th floor is The Bvlgari Bar, from which guests can experience the enchantments of a Mediterranean garden surrounded by Tokyo's skyline. Set between two rooftop terraces, The Bvlgari Bar is conceived of like an old pavillon in a historical Italian garden: in the summer, the doors can be opened to create a seamless flow from inside to out. The bar seats 47 inside and 62 outside.

With a huge cast iron-and-granite fireplace as its centrepiece, the 40th-floor Bvlgari Lounge is a richly textured aerie complete with wood-panelled walls and a coffered ceiling. Opening onto the Terrace, it’s the perfect spot to gather for light bites, Afternoon Tea or Chef’s famous Pasticceria.
