The visionary behind the signature Italian concept of Il Ristorante - Niko Romito in Dubai, Beijing, Shanghai, Milan, Paris, Tokyo, Rome and Bali, Chef Niko Romito brings extraordinary talent and artistry to the world of Bvlgari Hotels & Resorts. A native of central Italy’s Abruzzo region, he has remained true to his roots while reimagining the flavours of Italy with a daring and simplicity that rewrites the rules of classic cuisine. Before his collaboration with Bvlgari Hotels & Resorts, his restaurant Reale garnered three Michelin stars for its striking contemporary Italian dishes.
Chef Niko is known for his precision and mastery of Italian gastronomy, and his bold concept—developed exclusively for Bvlgari Hotels & Resorts—establishes a new canon of Italian cooking, focusing on the essential ingredients and character that express the culture, elegance and vibrancy of the Made in Italy designation.
The Chef developed the menus and personally trained each of the chefs that helm Il Ristorante - Niko Romito restaurants around the world. He continues to act as a counselor and consultant, overseeing the integrity of the kitchen in every destination.
Born and raised in Pavia in Northern Italy, Chef Alessandro Mazzali studied at IPSSAR Amerigo Vespucci in Milan before joining Bvlgari Hotel Milano in 2012. Following his time in Milan, Mazzali enriched his experience with appointments at some of the world's most celebrated kitchens including the three-Michelin-starred Lasarte in Barcelona and the two-Michelin-starred Seta by Antonio Guida at Mandarin Oriental, Milan. His time at Sine Restaurant in Milan honed his technique, fine-tuning his daring and modern approach. Mazzali returned to Bvlgari Resort Bali in 2022, and brings a contemporary voice to the island's culinary landscape at Il Ristorante – Niko Romito.
Having trained at ALMA, Scuola Internazionale di Cucina Italiana, Chef Francesca Stabile honed her craft at a number of top European kitchens, including the Michelin-starred Il Carpaccio at Le Royal Monceau in Paris and Le Relais Plaza at Hôtel Plaza Athénée. She spent time at Gusto by Sadler before joining Bvlgari Hotel Roma Il Ristorante – Niko Romito during its opening, quickly progressing to Sous Chef. As Chef de Cuisine at Il Ristorante – Niko Romito Bali, Chef Francesca Stabile brings a interpretation of Italian cuisine underpinned by rigorous technique and exacting flavours, along with a thoughtful use of local ingredients. She is currently the only female Chef de Cuisine across the Il Ristorante – Niko Romito collection, making her a significant presence in Bali
