Sushi Hōseki – Kenji Gyoten

With a name inspired by its Bulgari legacy — hōseki is the Japanese word for jewels ― this traditional omakase experience has just 8 seats, and will open under the direction of sushi chef Kenji Gyoten, three-star sushi chef at Sushi Gyoten in Fukuoka. It is a temple devoted to the ritual of Japanese dining, and features impeccable design elements and views onto a tiny zen garden.

To complement your meal, 15 different sake labels are available.

Kenji Gyoten, Curator of Sushi Hōseki – Kenji Gyoten

A third-generation sushi chef, Chef Kenji Gyoten opened his first restaurant Sushi Gyoten in 2009. In 2014, he became Japan's youngest three-Michelin-starred chef, and the youngest to be honoured in the sushi category. He is internationally recognized for his exceptional cuisine, and has held the role of Krug Ambassador Chef by Maison Krug. In 2019, he received his second three stars in Michelin's Fukuoka/Saga/Nagasaki special edition. At Sushi Hōseki – Kenji Gyoten, he brings his expertise to every facet of the omakase experience.

Takuro Shimizu, Chef of SUSHI HŌSEKI – KENJI GYOTEN

Born in Kanagawa, Takuro Shimizu started his career locally before moving on to positions in Hokkaido, Kanagawa and Tokyo, where he worked under renowned chefs and at three-Michelin-starred restaurants. Before rising to the role of chef at Sushi Hōseki – Kenji Gyoten, he worked at Sushi Gyoten in Fukuoka.

Only Tuesday, Friday, Saturday 

 

Dinner: 6.00 pm to 8.00 pm and 8.30 pm to 10.30 pm  

Closed Sunday and Wednesday
