Born in Kanagawa, Takuro Shimizu started his career locally before broadening his experience in Hokkaido, Kanagawa, and Tokyo. He honed his skills under renowned chefs and at three-Michelin-starred restaurants, bringing this unique background to every aspect of his role as Chef at Sushi Hōseki.
